MAY Edition- She is a gorgeous star, mother of Cloe and loving friend of mine. I admire her strength, her vision, the way she sees the world, the way she laughs out loud and reminds me of the freedom of living. I learned to run with her, I learned how to be strong with her, I learned to be passionate with her. I learned to give strong hugs with her. I learned to drink wine with her. I learn to laugh every time I see her.

Leave nothing but footprints, take nothing but pictures, kill nothing but time !!! ( jiji )

Cloé my 5 year old girl is an angel, a miracle... I had to go through high risk pregnancy in order to bring her into this world, she is beautiful, healthy & smart...

Vegan Nut& Seed Bread ( from Green Kitchen Travels )

2tbsp pysyllium husks powder 100g pumpkin seeds 1tsp fine sea salt 3tbsp melted cold pressed coconut oil or olive oil + extra for greasing a handful of raisins or chopped dark chocolate ( optional ) 350ml water 100g almonds 100g sesame seeds 100g sunflower seeds 100g flaxseeds

Preheat oven at 180· C( 350· F) Mix the psyllium husks powder & water very well together in a bowl and set aside for 5 mins until it forms a thick gel. Meanwhile, place all the nuts & seeds in a bowl, add the salt, oil, raisins or chocolate, if using,and stir. Add the psyllium gel and give it a good stir with your hands- it is important to combine it well, or you will end up with gel-like lumps in tour bread.Set aside for 1 hr. ( this step is optional but end result will be better ) pour into a greased loaf pan (30*10 cms 12*4in ) and bake for 60-70 min. Remove from the oven and leave to cool completely. Store wrapped in a tea towel in the fridge for up to a week, or put in freezer -it freezes well.
