Powerful Protein Carrot Pancake

Super easy ingredients:

2 medium ripe bananas
1 large egg, beaten
1 medium carrot, peeled and grated
2 tsp honey or agave or brown sugar (whatever you prefer)
¼ tsp ground cinnamon
½ cup greek yogurt
Coconut oil, for cooking
Berries, for serving

How to:

Heat griddle to medium heat. Mash bananas until smooth in a medium bowl, then stir in egg, carrot, sweetener, cinnamon and greek yogurt. Add 2 teaspoons coconut oil to the hot griddle to melt. Once hot, add no more than 3 tablespoons of batter to the griddle and cook, until golden brown, about 2 minutes per side. Carefully flip the cakes with a flat spatula as they’re a bit delicate. Serve with fresh berries.
